Italian chefs launched a campaign over the weekend to defend the authenticity of one of their country's most famous, yet what they believe to be, most widely and wrongly interpreted dishes. In an attempt to restore integrity to the well known dish Tagliatelle al Ragù alla Bolognese, or spaghetti bolognese, and educate the world on its correct preparation, nearly 450 chefs in Italian restaurants in 50 countries cooked the dish with authentic ingredients according to a recipe set down in 1982 by the chamber of commerce in Bologna - the home of bolognese.

Massachusetts Institute of Technology (MIT) researchers have pointed the finger at America's large-scale food production and distribution system as a cause of the nation's child obesity epidemic. The current approach to food production means children - especially those in lower income families - are surrounded by high-calorie products, and the solution lies in local food production and consumption, the group has concluded.

Restaurant group Relais & Chateaux recently announced that it has banned bluefin tuna from the menus of its 475 establishments. The group joins a growing number of chefs and restaurateurs who are taking the initiative to ban the endangered species in the face of any substantial political movement on the issue.
