TAP INTO SLOW FOOD VANCOUVER ISLAND'S MAPLE SYRUP TASTING WORKSHOPS SATURDAY FEBRUARY 6 AT DUNCAN BIGLEAF FESTIVAL




Taste the unique flavour of West Coast maple syrup at the BC Forest Discovery Centre near Duncan Saturday, February 6th from 10 a.m.to 4:30 p.m. Admission is $5. Learn about our growing maple syrup industry.

Tasting Workshops by Slow Food

Featured are two special workshops at 11 a.m. and 2 p.m. presented by Slow Food Vancouver Island. Learn the finer points of understanding the flavour of Bigleaf maple syrup at the Slow Food Taste Workshop. Guided by Chef Mara Jernigan, President of Slow Food Canada, you will learn how weather, location and the age of the trees effect flavour and quality. You'll learn about grading for colour and quality and how to measure sweetness by brix. Test your palate as you compare some of the best examples of this years' harvest along with an example from Quebec.

Get there a little early for a good seat.

In partnership with the Sapsuckers, a group of local maple syrup producers, the Bigleaf Maple Syrup Festival is fun for families. Don Genova, local food writer and a judge at the festival said, \"There were twice as many people than expected at last year's festival, People went home eyeing up their trees as potential sources of the delicacy.\" He added \"I'm told that the sap is flowing, despite the early warm weather.\" Genova is also Slow Food Vancouver Island's Convivium (President) leader.

Visitors are invited to participate in tapping demonstrations, discover how to cook with the syrup and watch as Don Genova, Bill Jones and Mara Jernigan judge entries from local producers.

Dance to musical entertainment provided by Shelley and Shannon Smiley from 11:00 am - 3:00 pm and the museum's train will be running from 10:30-3:30. The Bigleaf Maple Syrup Festival is unique on Vancouver Island. This event is about the local maple syrup industry and is the only festival where visitors can find out how local maple syrup is made. You will leave the event ready to tap your own backyard trees.
